When you think of detox recipes, you probably think of salads and smoothies. There’s certainly nothing wrong with salads and smoothies, but for those of us who aren’t salad eaters and who have had our fill of green smoothies, this sweetener-free sorbet is proof that desserts can be detox-friendly too.
Frozen cucumbers are combined with an apple, lime juice, and fresh basil to create this healthy, cooling treat—and the best part is, you don’t even need an ice cream maker to make it! If you prefer a sweeter sorbet, you can add coconut syrup or agave nectar, but the apple and cucumbers provide a touch of sweetness to balance the tart lime even without added sugar.
The hot days of summer aren’t over quite yet and if you’re seeking more healthy frozen dessert options, N’Ice Cream by Virpi Mikkonen and Tuulia Talvio is a cookbook you’ll want to check out. It’s full of dairy-free ice creams, bars, cakes, shakes, and beautiful photos of all the above—in fact, it’s kind of hard to read this book without craving ice cream. But that’s okay, because the recipes in N’Ice Cream are ones you can feel good about eating.

- 3 cucumbers, peeled, seeded, and frozen
- 1 green apple, cored, sliced, and frozen
- Juice of 1 lime
- 3 fresh basil leaves
- A splash of coconut syrup or other sweetener, optional
- Combine the cucumbers, apple slices, lime juice, and basil in a blender. Blend until the mixture is a smooth slush. Add sweetener, if desired. Serve and enjoy!
Note! You can also make the slush from non-frozen cucumber and apples by blending all the ingredients in a blender and then running the mixture in an ice cream maker for about 15 minutes.
