When mixing up a smoothie, don’t overlook a classic ingredient your eyes will love – carrot! Carrots contain a high concentration of beta-carotene, a red-orange pigment found in many plants and fruits. Beta-carotene is a precursor form of vitamin A.
The body converts beta-carotene into vitamin A, which is essential to the health of the eye. This Beta-carotene Eye Enhancing smoothie is a twist on the simple carrot juice smoothie. Since beta-carotene is a fat soluble organic compound its absorption is enhanced if eaten with fats. The powerful combination of carrot and coconut is delicious and ensures the greatest absorption of the beta-carotene abundant in the carrots.
- 1 cup coconut milk or coconut water*
- 1/2 cup chopped carrot
- 1/2 cup frozen pineapple
- dash of nutmeg
- pinch sea salt
- top with coconut flakes, raisins &/or oatmeal
This recipe serves one smoothie equaling about 2 cups.
Add coconut milk or coconut water, chopped carrot and frozen pineapple into the blender. Add one dash each of nutmeg and sea salt. Blend until smooth. Top with coconut flakes, raisins &/or oatmeal. Enjoy!
*When selecting coconut water choose products with zero added sugar! Sugar comes in sneaky forms on ingredient lists (i.e high fructose corn syrup, fructose, dextrose, evaporated cane juice, lactose, maltose, sucrose, agave nectar…) Coconut water should have only one ingredient if it is the good stuff!2
