My kids are obsessed with energy bars. Clif bars are their fave; Luna bars are also popular. Lara bars, not so much. So now I only buy those so they leave my stash alone. But the bars are a pretty handy bribe when I’m desperate to find something the kids will eat for breakfast.
My babysitter showed me how to make homemade energy bars, and, no kidding, they are the bomb. The combination of protein from the almond butter and the fiber from the oatmeal definitely keep you full.
I’m not usually a big fan of bar type eating in general, since it implies scarfing down food and eating on the go. This is a bad habit of mine. I finish the day and can’t remember when or what I ate.
But these bars have the perfect amount of crumble. You have to sit and focus for a minute. Preferably with a glass of almond milk.
Taking pictures always attracts hungry critters. Yep, these were a hit.
No Bake Energy Bars Recipe
- 1 cup old fashioned oatmeal
- 1 handful of low sugar Cheerios
- 1/3 cup dried fruit like cherries or raisins. I also add a small amount of chocolate chips.
- 1/2 cup almond or peanut butter
- 3 tablespoons honey
- 1 teaspoon vanilla
Mix all of the ingredients together in a bowl. Line a square pan or pie plate with parchment paper and spread the mixture out in a thin layer. Refrigerate for at least 2 hours. Lift bars out of pan with parchment paper and then slice.3
