I’ve found the way to my kids’ hearts – popsicles. We have the world’s most amazing paletas shop nearby – too close, really, because popsicles now feel like a treat we deserve after surviving a hot, summer day.
But my little trick is to blend up a fruit and coconut milk smoothie and pour it into a popsicle mold. I can hide all sorts of good stuff in these (spinach even), and the kiddos will devour it – as long as you call it a popsicle!
Little people will only hold still for photos when food is involved. And popsicles are perfect for moms who like to throw whatever is on hand in the blender (who can find a recipe when you need it?). Full fat coconut milk adds good fats and a creamy texture you can combine with just about any fruit for sweetness. I think this particular popsicle blend had strawberries, banana and orange. I’ve also done chocolate and kale.
We may start having popsicles for breakfast. (Am I the only one with kids who won’t eat?!) Popsicles all day! I’ll be the most popular mom ever. :)
Coconut Milk Smoothie Popsicles
- 1 can full fat coconut milk
- 1 tablespoon chia seeds
- 1/2 banana
- 1 cup fresh fruit use whatever you have on hand
- Handful of spinach or kale optional
- Combine ingredients in blender and mix until combined.
- Pour into popsicle molds and freeze.
