Ingredients

  • ½ cup Herdez Guacamole Salsa
  • 1 chicken breast, cooked can use rotisserie
  • 1 cup farro, cooked
  • cup corn
  • cup pinto beans
  • ¼ cup Cotija cheese crumbles
  • ¼ cup kale, chopped
  • ¼ cup mini sweet red peppers, thinly sliced
  • ¼ cup red onion, thinly sliced

Instructions

  • Cook the farro according to package instructions.
  • Place the farro at in a medium bowl. Drizzle on ¼ cup HERDEZ Guacamole Salsa and stir into the farro.
  • Top with remaining ingredients, drizzle on remaing Guacamole Salsa and mix thoroughly.

Notes

Assemble your farro bowl, drizzle Guacamole Salsa on top, and dig in! Not only are meal bowls pretty to look at, but the leftovers are ideal for packing up for lunch the next day.
