Sweet Potato Burgers with Avocado-Lime Sauce

Equipment

Ingredients

For the burger patties:

  • 1 medium roasted sweet potato peeled and mashed
  • 1 cup cooked millet
  • 1 egg whisked
  • 1 small onion finely diced
  • 1 clove garlic minced
  • 1 teaspoon turmeric powder
  • 1 teaspoon curry paste
  • ¼ teaspoon smoked paprika
  • A pinch of sea salt

For the Avocado-Lime Sauce:

  • 1 ripe avocado
  • Juice of 2 limes
  • 1 teaspoon tahini

For assembling:

  • Sprouted grain buns sliced red onion, mixed greens, seeds (sunflower, chia, or pumpkin)

Instructions

  • Preheat oven to 350ºF. Line a baking sheet with parchment paper.
  • Place all of the ingredients for the patties in a large bowl and stir to combine.
  • Use your hands to shape the burger mixture into patties and place them on the baking sheet.
  • Bake for 15 minutes on one side, carefully flip the patties over, and bake them for 15 more minutes, or until lightly browned.
  • While the burgers are baking, prepare the avocado sauce. Place all of the ingredients in a blender and puree until smooth. Set aside.
  • Assemble the burgers; place the patties on the buns, drizzle with avocado sauce, and top with onion slices, greens, and sprinkle with seeds.

Notes

To reheat them, put them in the oven at 350ºF until they're warmed through or heat them up in a skillet on the stovetop. (Your microwave will work too in a pinch, but they'll be a bit soft.) If you don't have buns, they're perfect on a bed of fresh greens or rolled up into a whole grain tortilla.
