Pumpkin Spice Green Smoothie Bowl

Ingredients

  • 1 cup unsweetened coconut or almond milk
  • ¼ cup pumpkin puree or mashed sweet potato
  • ½ pear cored
  • 2 leaves of lacinato kale stem removed
  • 1 1-inch chunk of fresh ginger, peeled and chopped
  • ¼ avocado or 1 teaspoon coconut oil
  • 1 scoop of vegan vanilla pea protein powder
  • 1 teaspoon blackstrap molasses
  • ½ teaspoon cinnamon
  • Pinch of nutmeg
  • Optional: pumpkin seeds for sprinkling on top

Instructions

  • Puree all ingredients together in a blender until smooth. Pour into a bowl, top with pumpkin seeds and eat with a spoon.
