Light Green Goddess Dressing

Ingredients

  • 1 ripe avocado peeled and cut into chunks
  • 1 garlic clove
  • ½ bunch fresh parsley
  • 5-6 fresh basil leaves
  • ½ small onion finely diced
  • ½ c. nonfat Greek yogurt
  • 2 tsp. extra-virgin olive oil
  • 1 tbsp. lemon juice
  • 2 tbsp. purified water
  • ¼ tsp. cayenne pepper
  • Pinch of sea salt

Instructions

  • Blend all the ingredients until creamy. If necessary, add more water until the dressing reaches the desired consistency.
  • Store the dressing in a lidded jar in the refrigerator for up to 4 days.
