Watercress and Quinoa Salad with Blueberry Vinaigrette

Ingredients

For the salad

  • 2 cups fresh watercress leaves
  • ¼ cup fresh blueberries
  • 1 cup mixed red and white quinoa cooked and cooled
  • 1 tablespoon toasted sunflower seeds
  • 1 teaspoon toasted pumpkin seeds

For the vinaigrette

  • ½ cup fresh blueberries
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon organic raw honey
  • Pinch of pink Himalayan salt

Instructions

For the vinaigrette:

  • Place all the ingredients in the blender, and process until smooth.

For the salad:

  • Mix all the salad ingredients, add the dressing, toss to combine and serve immediately.
