Simple Chocolate Chai-Chia Seed Pudding

An even healthier, more delicious way to eat chia pudding.

Ingredients

  • 3 chai tea bags use decaf, if you prefer
  • 6 ounces just-boiled water
  • 1 13 to 14-ounce can coconut milk, full-fat or light, but with minimal additional ingredients
  • ¼ cup maple syrup or other sweetener of your choice
  • 1-2 tablespoon cocoa powder
  • ¼ teaspoon vanilla
  • cup chia seeds

Instructions

  • Pour just-boiled water into a heat-safe container and steep the chai tea bags in it for 3-5 minutes (or as long as is recommended on the package).

  • Remove the bags, squeezing out the excess liquid.
  • Mix the steeped tea, coconut milk, maple syrup, cocoa powder, and vanilla in a pot and whisk to combine.
  • Add the chia seeds and whisk again.
  • Cover and place in the refrigerator overnight to chill.
  • Remove and whisk once more to redistribute the seeds.
  • Top with fruit of your choice. I chose fresh, local peaches, but strawberries would also be a great match.

Notes

Besides the fact that it’s good for you, it’s just plain good, especially in this pudding. The earthy, sweet spices in chai really compliment coconut milk well. And in just a couple of stirs, dessert is served.
