Cheddar Chive

Roasted corn with melted cheddar and topped with fresh chives.

Ingredients

Ingredients:

  • 6 ears of corn
  • 3 Tablespoons butter
  • 6 Tablespoons finely grated cheese
  • 1 small bunch chives sliced
  • salt and pepper to taste

Instructions

  • Preheat oven broiler to low or grill to medium-high heat. Have a broiler pan ready if using oven. Line it with foil. If using grill, brush grates with oil.
  • Place corn on broiler pan or on the grill. Let cook for 8-10 minutes, turning as needed for even cooking. It's okay if it blackens in spots. Remove from heat and top with ½ Tablespoon of butter, spread it all over the cob, letting it melt. Season well with salt and pepper. Sprinkle each cob with 1 Tablespoon cheddar cheese and chives. Serve immediately.
