Sweet Potato Latkes + Spiced Thyme Applesauce

Ingredients

Sweet Potato Latkes

  • 2.5 pounds sweet potatoes peeled
  • 6 tablespoons flour
  • 4 large eggs lightly beaten
  • 4 green onions sliced
  • ½ teaspoon sea salt
  • Vegetable oil for frying

Horseradish Sour Cream

  • 8 ounces sour cream
  • 2 tablespoons chives thinly sliced
  • 4 teaspoons horseradish refrigerated
  • 1 teaspoon lemon zest
  • ½ teaspoon ground pepper
  • ¼ teaspoon salt

Spiced Thyme Applesauce

  • 1 cup applesauce
  • 1 pear peeled and chopped
  • 1 tablespoon butter
  • 1 teaspoon fresh ginger finely grated
  • 1 teaspoon lemon juice freshly squeezed
  • ¾ teaspoon fresh thyme finely chopped
  • teaspoon kosher salt
  • teaspoon cloves ground

Instructions

Sweet Potato Latkes

  • Grate potatoes through the large holes of a box grater (if you have a spiralizer, you can also turn them into thin noodles).
  • Stir together potatoes and flour. Stir in eggs, green onions and salt.
  • Pour oil to depth of ½ inch into a large heavy skillet, heat to 350.
  • Shape a generous tablespoon of sweet potato mixture into a patty and fry in batches, 2-3 minutes on each side. Drain on paper towels.
  • Makes about 2 dozen, and you definitely want to eat these immediately while they are still warm and crunchy.

Horseradish Sour Cream

  • Stir together ingredients in a small bowl. Cover and chill at least 30 minutes.

Spiced Thyme Applesauce

  • Stir together all ingredients in a saucepan. Bring to a boil over medium-high heat. Reduce heat to low and simmer for 5-7 minutes until pear is tender. A chunky applesauce is recommended but I used my regular applesauce and it was fine. I also omitted the ginger because I didn't have any on hand and we still wolfed it down.

Notes

To serve, I like to lay out the latkes and sides on a table and let everyone make their own. You can also put them together ahead of time and serve them like little finger-food appetizers. Either way, they're delicious!
