Chilled Cucumber and Avocado Soup

Ingredients

  • 2 ripe avocados peeled and cut into chunks
  • 1 cucumber cut into chunks
  • 1 garlic clove
  • 1/4 tsp. red chili flakes
  • 2 tbsp. lemon juice
  • 2 tsp. tahini
  • 1/2 c. purified water
  • 3-4 fresh mint leaves
  • Pinch of sea salt

Instructions

  • Blend all the ingredients until creamy.
  • Refrigerate for at least 30 minutes, then serve garnished with mint leaves.
