Southwest Chicken Bowl

Ingredients

  • Shredded chicken
  • 1 cup farro
  • ¼ cup black beans
  • 2 tablespoon tomatillo sauce
  • ½ avocado
  • ½ teaspoon chili powder and cumin
  • Cilantro
  • Onions zucchini, yellow squash

Instructions

  • Mix farro with 1 tablespoon of tomatillo sauce, chicken, chili powder, and cumin.
  • Place into a bowl and top with remaining ingredients.
  • Enjoy warm or cold.
