No-Bake Almond Blueberry Granola Bars

These no-bake granola bars are gluten-free, incredibly quick and simple to make, even if you make your own almond butter.

Equipment

  • Refrigerator
  • Baking pan or parchment paper

Ingredients

  • 1 ⅓ cups rolled oats
  • cup almond butter store-bought or homemade is fine
  • ¼ cup maple syrup
  • cup dried blueberries or another dried fruit
  • cup chopped almonds (or another nut)
  • ½ teaspoon cinnamon ground

Instructions

  • In a medium bowl, stir together all of the ingredients.
  • Press the bars into a pan or use a piece of parchment paper to control the thickness.
  • Refrigerate the bars for an hour, cut and enjoy.

Notes

Feel free to swap out any of the ingredients in this recipe. You can use agave or honey in place of maple syrup, dried strawberries or cranberries in place of blueberries, or even coconut in place of the oatmeal. It's completely up to you!
Store granola bars in an airtight container in the refrigerator for up to 2 weeks.
